Nut-free pesto

Requirements

  • 3 cups lightly pressed spinach leaves (about 90 grams)
  • 2 cups basil (fresh, about 60 grams)
  • 25 g grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • Freshly ground black pepper to taste

Preparation

This recipe is very simple. Put all the ingredients in the blender jug and blend on low speed, using the pulse function, until all the ingredients are well blended. Increase the speed and blend until a smooth mixture is obtained. Add extra spices to taste. Store tightly closed in the fridge.
