Orange biscuits

Requirements

  • 186 g butter at room temperature
  • 1 cup granulated sugar
  • 1 tsp finely ground lemon peel
  • 1 egg
  • 2 cups of flour
  • 1/2 teaspoon baking powder
  • 1/2 cup orange jam

Preparation

Preheat the oven to (180 °C / hot air oven 160 °C). Grease the oven plates and line with baking paper. Using the mixer hook, mix butter, sugar and orange zest for about 2 minutes on medium speed (5-7) or until the mixture is creamy. Add the egg and mix well. Add the flour and baking powder and mix about 30 seconds on low speed (1-4) or until everything is mixed in. Roll 2 teaspoons of the mixture into balls, flatten them slightly and place them on the prepared baking sheets. With a finger, press a well into each ball. Spoon ½ teaspoon of orange jam into the well. Bake for 10 minutes or until the biscuits are cooked. Remove from oven and cool on a metal rack.
