Pulled pork

Requirements

  • 1.5-2kg pork shoulder, lightly trimmed and cut in half (to allow for even cooking)
  • 1 tbsp vegetable oil
  • 2 x 340 grams of your favourite BBQ sauce
  • 240ml water

Preparation

Select the saute function and allow to preheat.

Add the oil and the pork pieces and fry until brown on all sides (you may need to do this in 2 batches). Pour in the BBQ sauce, add the water and stir well.

2. Put the lid on and close. Select the meat/stew function and set the time for 1 hour and 15 minutes.

3. Once the appliance has finished cooking, allow it to cool for 5 minutes. Release the pressure carefully before opening the appliance. Scoop the pork onto a suitable serving dish and cut off any fatty bits. (If you prefer your pork crispier, place it on a baking tray and place it in a hot oven for 10 minutes).

4. Pull the pork apart using 2 forks. 

5. Thicken the sauce with a little cornstarch mixed with water and spoon a little over the pulled pork.

6. Serve with pasta or potatoes, or serve on crusty buns with coleslaw and jalapenos.
