Chocolate lava cake

Requirements

  • 100 g butter, melted, plus a little extra for the dish
  • 225 g self-rising baking flour
  • 150 g caster sugar
  • 75 g cocoa, sieved
  • 5 g baking powder
  • Grater and juice of 1 orange
  • Salt
  • 3 medium-sized eggs
  • 150 ml milk
  • 100 g chopped orange milk chocolate

For the sauce

  • 300 g light brown caster sugar
  • 40 g cocoa powder

Preparation

1.    Lightly grease the inner pan with a little butter

2.    Mix the flour, caster sugar, cocoa, baking powder, orange zest and a pinch of salt in a bowl. 

3.    In a separate bowl, whisk together the orange juice, eggs, melted butter and milk, add to the dry ingredients and mix until smooth. Stir in the chocolate chips and then pour the mixture into the cooking bowl.

4.    Make the sauce by mixing 420 ml of boiling water with the brown sugar and cocoa powder. Carefully pour the sauce over the mixture in the cooking pot. Cover and cook on slow cook High for 3 hours until firm and risen. Make sure the steam release valve is on open.

5. Serve warm, possibly with whipped cream and/or vanilla ice cream.
